So you can make 2 at a time.

Fill batter on top. Lock it. Flip it, fill batter on empty one. Lock it, Flip back....first one might be done, take it out, fill batter, flip it and keep repeating.

Also, the side that has gravity down probably does cook just a BIT quicker.
